There's a thermostat housing near the front passenger side of the engine, with a large radiator hose coming out of it, plus a smaller hose and pipe.

Undo the two bolts and put the top aside, pull out the old thermostat, put the new one in along with a new gasket.

If you have a torque wrench, the setting for the bolts is 20Nm.

HTH.

But please firstly remove the radiator expansion tank cap (slowly) so there is no chance of any pressure buildup in the cooling system.

When removing those two bolts, ease them undone evenly. By that I mean undo each one a little alternately, until they are both finger tight, to remove by hand.
DON'T remove one completely before loosening the other!

Good luck....

I've removed my thermo housing cover maybe 5 times over the past 7 years, I just undid both bolts?? I also didn't use a torque wrench, so they're probably done up a lot tighter than they should be. I ended up using a bit of form-a-gasket around the edge to seal a minor leak (which may have been because of the overtightened bolts)

Maybe I'm just lucky nothing bad has happened.

I should have mentioned in my first post that the engine (and therefore coolant) should be stone cold. Apologies for missing that.

Can I ask why it should be stone cold? I've done a few on falcons and its never been cold, in fact its been quite warm.

Stone cold to be safe... but generally just not pressurised.

I always use a bit of permitex on the thermostat gasket. Just to help it seal nice

Read a post that mentioned removing small hose from header tank and draining some of the coolant before undoing housing, so coolant doesn't spill out over motor I presume. Is this right?
