Default Mondeo 1.8 wagon over heats

Overheating where radiator resevior boils. Mechanic checked for hose leaks and pressure tested radiator...all good.he put on a new rad cap which has stopped the boiling but the temp gauge varies from low to med, them med high to low.New themostat (ford part) put in as well.

Maybe a faulty temp gauge?
3 speed fan going fine.Nervous to take on an upcoming 3 hr drive.
